A partner and customer of WESSLING France for several years, Carole La Mantia, manager of the restaurant La Scuderia located in the industrial zone of Courtaboeuf in Essonne, talks about her motivations for working with a laboratory like WESSLING.

What types of WESSLING services are provided in your restaurant?

"We have been working with WESSLING for 5 years. We carry out bacterial detection services with them on food areas, such as work surfaces, the slicer, but also on everything that is food preparation such as sandwiches and salads among others."

Why do you do these analyses? 

"First of all, we do it for ourselves, to make sure that the right methods and processes are used. It also allows us to make sure that the cleaning products are effective and that the cleaning is done properly. It's important for us to know that our facility is fully compliant with hygiene standards. We also do it for our customers, so we can reassure them, thanks to the Hygiene Control stickers displayed at the entrance of the restaurant, that we attach importance to the cleanliness of our establishment.

The flagship word is reassuring, because it can happen to anyone to forget to use the right product or not to clean properly. So it's very reassuring to have these regular checks and to be informed."

Why did you choose to trust WESSLING?

"I was approached, and what I particularly appreciated was the (geographical) proximity of WESSLING. I prefer to work with people who are close by.

The speed of the results is also an excellent argument, because we often receive the results quickly. We appreciate the fact that we have advice and explanations, because when we receive the results, we don't necessarily know how to read and interpret them. Having explanations on what we do well or what we do badly allows us to rectify the situation.

"Of course, with pleasure. If I had a colleague who one day had a need I would recommend WESSLING without hesitation!"

Have you already carried out training with WESSLING?

"For the moment we only do sample analysis. But in the future I would like to do more training in food safety and hygiene. I didn't know that WESSLING carried out these trainings, I will know who to turn to when the time comes."
